Quick and Easy Leek and Potato Soup Recipe (Quantities for 2 decent portions for 2 people!)

Ingredients:

-2 leeks

-4 potatoes

-pint vegetable stock

-mixed herbs and chives

Method:

1. Cut up and saute the leeks then add the cubed potatoes.

2. Add vegetable stock then boil for roughly 20 minutes.

3. Add in the mixed herbs and use a hand blender to blend it all. Top with chopped chives.

4. Serve with hot baked crusty bread with dollops of butter. YUM!
