Chocolate Courgette Cake

A new recipe I tried and finally have uploaded inspired by Andrew Homers recipe over on his blog.

It sounds very odd putting courgette on but honestly it makes its so moist and tasty!

Heres a photo of a few slices of ours-most was eaten very quickly!

001Its from Riverford Organics website-a brillaint source for recipes to use up all sorts of different vegetables and fruit. Also great for getting ideas for feeding veggies and vegans and great ideas for salads and pasta dishes. The chocolate courgette cake can be found at the link below:

The differences I did was put 600g of courgette in, used just normal sugar not brown sugar as well.

  1. Year before last i’d grown so many courgettes i didn’t know what to do with them, then discovered this cake receipe and WOW kids couldn’t get enough. Last year only got 2 courgettes so didn’t make any cake, hoping to make loads this year 🙂

  2. Ooh would be interested in the beetroot cake recipe if you we’re thinking of sharing. At the Local Food co-op there were loads of marrows last year but the mice got the beetroot (sob!) – hoping things go better this year as I am particularly keen on beetroot. Does the cake include chocolate?

    • OKay will put up a beetroot one soon : ) Yes marrows! My mum made a marrow cake with her children at preschool last year and they loved it! : ) The cake can do without chocolate but I usually make it chocolate based as it is my weakness! x
