Hello, I have had a day of baking today including this recipe for using up Rhubarb which is in season at the moment! Its a chocolate sponge topped with sticky Rhubarb and chocolate Chips : ) It tastes better than the photos look!
250g white plain flour
2 tsp baking powder
4 tbsp cocoa powder
2 tsp cinnamon
200g nautural yoghurt
Middle Layer: 450g Rhubarb Sticks
Second Mix: 100g milk chocolate (cut into big chunks), 50g butter, 50g white plain flour, 30g sugar.
Method: (preheat oven to 180’c)
1. Put First Mix the flour, baking powder,cinnamon, cocoa powder and butter into a bowl and make into crumbs (like you would for fruit crumble!). Then add the 2 eggs and yoghurt to this and mix all together. Empty into a greased square baking tin.
2. Wash and cut Rhubarb into little 2/3 cm chunks-place these on top of the cake mixture.
3. Mix up second mix ingredients and sprinkle this over the top of the Rhubarb.
4. Bake in oven for 45 minutes. Eat!
