Curried Sweetcorn Patties with a Lemony Natural Yoghurt Dip: An easy and tasty veggie meal! (feeds 2/3 people)
For Patties: Get 1 small onion (chopped), 1 tin sweetcorn, 2 tablespoons of cornflour, 5 tablespoons plain flour, 1 teaspoon each of curry powder and turmeric, a sprinkle of salt and chilli flakes. Mix all of these ingredients together to form a paste!
Heat a frying pan with a little oil. Then fry a few big spoonfuls of the mixture at a time. Once brown on both sides its done! Can keep in oven to stay warm while you make the dip.
For Dip: Mix 5 tablespoons of natural yoghurt, half a lemon (juice), a handful of chives, a little salt and a pinch of turmeric on the top and mix together.
Dip patties in the yoghurt mix for tastiness! : )
