Potato and Parsnip Rosti

After returning from Switzerland we miss Rosti! Rosti is the grated potato  infamous Swiss dish which we ate copious amounts of in the last 2 years!  So here is our twist on it using leftover spare veg from Christmas time.

Potato and Parsnip Rosti (for 2):

  • 1 big potato
  • 2 parsnips
  • 1 egg
  • 4 tablespoons flour
  • oil for frying

Method:

  1. Peel the potato and parsnips.
  2. Grate them and mix in a bowl.
  3. Add the flour and egg and mix thoroughly.
  4. Heat a little oil in a frying pan and fry the mixture in small pancake portions (flattened). Will take approximately a few minutes on each side.

Serve up as a snack with salt, pepper and tomato ketchup as a snack or with caramelised onions and goats cheese as a posh supper!
