Recipe: Carrot and Sultana Tea Loaf

Ingredients:

  • zest of 1 lemon and its juice
  • 2 teaspoons cinnamon
  • 4 eggs
  • 120g sultanas
  • 200g self raising flour
  • 200g sugar
  • 200g grated carrot

Method:

  1. Preheat oven to 180’c
  2. Butter the loaf tin.
  3. Mix all of the ingredients together (except grated carrot)
  4. Then add the carrot and mix well.
  5. Transfer into loaf tin and bake for about an hour – pierce with a knife to check it is done.
